This salad is AH-Mazing, easy, and perfect for on-the-go. Do you REALLY need more than that?
WHAT YOU NEED
2 Cups diced cucumber
1 cup diced cooked chicken or turkey
2 eggs, hard boiled
1 head romaine or green leaf lettuce, sliced
WHAT TO DO
1. Assemble the salads in 2 wide mouth quart size mason jars
2. Layer in the cucumber and then the avocado. Drizzle dressing of coice (I use olive oil & vinegar) to coat the avocado (this will help prevent it from browning)
3. Top with the cooked chickeN, eggs, and romaine. Top with lids and refrigerate, up to 3 days
4. to serve, invert salads into bowls or plates and ENJOY!
