This salad is AH-Mazing, easy, and perfect for on-the-go.  Do you REALLY need more than that?

Serves 2



2 Cups diced cucumber

1 avocado

1 cup diced cooked chicken or turkey

2 eggs, hard boiled

1 head romaine or green leaf lettuce, sliced



1. Assemble the salads in 2 wide mouth quart size mason jars

2. Layer in the cucumber and then the avocado.  Drizzle dressing of coice (I use olive oil & vinegar) to coat the avocado (this will help prevent it from browning)

3. Top with the cooked chickeN, eggs, and romaine.  Top with lids and refrigerate, up to 3 days

4. to serve, invert salads into bowls or plates and ENJOY!




SURPRISE Salmon Salad

This is absolutely one of the most delicious, easy to make, salads I've ever tasted!  So much so that my family & I had this for our Easter Feast!  Packed with nutrients (and a couple of surprise ingredients), this is a great go-to for any occasion..... Below I will share the ingredients with you.  Would love for you to share your thoughts below.....

Ingredients: (I use all organic ingredients)

Lettuce - 1 large head

Romaine Lettuce

Kale - 1 to 2 bundles depending on how large you want your salad

Roma Tomatoes - 3 to 4 depending on how large you want your salad

Cucumbers - 2

1-2 Farro - cooked & drained

1-2 diced sweet potatoes - steamed or sauteed 

1-4 pieces of wild caught Salmon - grilled per recipe below

1 cup Olive Oil

1/2 Balsamic Vinegar

1/4 to 1/2 Local Honey (can use more to taste)

1/2 tsp. Onion Powder

1/2 tsp. Garlic Salt

Sea Salt (to taste)



     Cook 1-2 cups of Farrow in a large pot using Organic Chicken Stock or Bone Broth as your liquid.  Bring to a boil & cook on medium heat for 20-30 minutes.  While that is cooking, wash all produce & assemble into a salad.  ( I like to use a salad spinner to easily remove any excess water from the lettuce).  Once the Farrow is cooked, drain & put to the side.  Using a large cast iron skillet combine  Olive Oil, Balsamic Vinegar, Local Honey,  onion powder, garlic salt, sea salt to taste & heat until it forms a sauce or reduction that will cover the salmon.  Gently place Salmon in the skillet & cook until done. (About 10-15 minutes - can cook for less time depending on how "done" you prefer your meat).  While the Salmon is cooking saute or steam the diced sweet potatoes until they are tender.  

Salad Assembly:

Layer ingredients in a "stack up" method beginning with Farro, Sweet Potatoes, Lettuce/Kale, Tomato, Cucumber, Salmon & Enjoy!

How I Left My Stressed Out, 18 year career & overweight life for Freedom, Purpose, Abundance, & Resilience!

When crisis hits:

In 2012 we discovered our daughter had stage 4 Lung Cancer, 5 months later my Dad was diagnosed with Stage 4 Lymphoma.  The devastating news instantly forced us into panic and survival mode…

This season called for daily trips to the hospital for treatments, emotional turmoil, and everything that comes with the anguish and pain of battling sickness with our loved ones. 

It hit us like a ton of bricks…

During this time, we were awakened to the reality of how many people were struck down with disease and illness.  It’s heartbreaking to see how many are merely existing from treatment to treatment…

Meanwhile, my husband and I were battling with our own ability to remain healthy during this 10-month period.  In between treatments and appointments, we found ourselves turning to food (pizza, cookies, starbucks) to help numb the pain…

My wake up call:

One day I woke up from this nightmare, stared in the mirror and didn’t like what I saw and hated how I felt…

Who was this 25 lb overweight woman?  Once a healthy, vibrant petite (at 5’3”) girl, I didn’t recognize this person staring back at me.

In the hospital we were educated on cancer, that it feeds on sugar, and that many of the foods we deem “normal” are laced with additives, preservatives and artificial sweeteners.  I was shocked to learn that our children, although fed well, are starving nutritionally on the inside…

Something needed to change.

Eat to live vs. live to eat:

I took these newfound revelations to heart and decided to take charge of my health, and my families health.  I was introduced to a 30-day program, and contrary to the masses who will “start after the holidays”, began my journey over Thanksgiving and by the end of November I dropped a whopping 8 lbs!

Wow, this was like pushing the “easy button” on my busy, crazy life…

At the time I was the Office Manager for our family business, along with juggling Mom duties, I didn’t have a lot of extra time to figure out how to lose the weight and get healthier.

Luckily the program accommodated my on-the-go lifestyle with easy recipes and grocery-shopping lists, even a supportive community.  What’s more I learned how to cook fun and easy “clean” meals for my family!

I was beginning to feel like myself again.  That Jane (who is anything from “plain Jane”) who goes after it with all she has.  That Jane who laughs, loves and strives to be her best, who goes FULL OUT. 

That Jane who Jesus calls to live a resilient and vibrant life. 

There she is!


New Life:

I had a newfound confidence and I was ready to channel it.  I received a nudge to go deeper with this.  After all, I had experienced this quick (and fairly simple) inner and outer transformation, I was eager to pay it forward…

The problem was, I was extremely busy with my career and family.  I convinced myself that I had ZERO time to get more involved…

Or so I thought.

The Leap:

I felt God whisper in my ear “Share this with everyone”…

In the same breath I received a text from my dear friend and sister in Christ, Gena Fryar.  She opened the opportunity to share my passion of renewed health and confidence with others, and shared with me how to hit the next promotion doing so…

I took this as a divine sign and confirmation to take the leap and start using my God-given gifts and journey to impact others.

The result of faith:

After taking the leap of faith to begin my new business in health and wellness, in just 8 short months, I was able to retire from my 9-5, 18-year management position.  I came home to my family, I came home to my LIFE.

I stepped into a time freedom like I’ve never known, and into the purpose for which HE has called me.

My wellness business has been the vehicle to realize my passion for loving and serving others, and earn an amazing income doing so…

It has shown me my true “WHY” for this life, which is to LOVE, SERVE and BUILD my family and community.

This business has revealed who I truly am in Christ and for that, I am eternally grateful.

#beautytips for 2017

2017 is HERE.......& so are a few tips for all you #beauties. Regardless of our "true" age, (really I'm still 27 😉) we can all look & feel our best every day.........

1. Drink LOTS of water:  

staying hydrated is so important for beautiful glowing skin & overall health.  

2. Follow a Skincare Regimen:  

I know, I know.....we are all busy but really a good skincare routine is vital to keeping your skin fresh & glowing. Plus it reduces the signs of aging (really😃). My favorite is the RE9 system introduced to the market several years ago by Arbonne. With a delicious Citrus smell, this system reduces the fine & wrinkles of everyday plus tones & firms the skin for an overall younger appearance. It's like the "fountain of youth" at our fingertips.  

3. Cosmetics:

 whether you are the "powder, mascara & GO" type or "full-face of makeup" type, having cosmetics that are toxin-free are a must. Not only are these "agents" bad for our skin, they are also bad for our Health. 1. Keep it simple & set aside an Emergency Fund because believe me when you commit to a plan, emergencies will arise! I recommend anywhere from $500 to $1,000 depending on your Family's Income! 

2.Use a Debt Snowball to track all debts owed. Start with the one with lowest balance, pay it off, then apply that payment to the next in line. Continue the plan until ALL debts are paid! 

3.Put Away 3 to 6 months of Income into Savings! 

4. INVEST in YOUR FUTURE by investing 15% of your Income into a Roth IRA or Pre-Tax Retirement Plan. Retirement will be here before you know it & you will want to be ready! 

5. Start Saving for your child's COLLEGE EDUCATION!  I know all to well just how expensive College is these days as well have put one through Nursing School & another through Cosmotology School. And we still have two kids left to go!

6. PAY OFF Your Home EARLY! This can easily be achieved by paying more than the required amount. And is even better when you pay half the payment every two weeks. This will cut the Interest Paud in half!

7. Continue to BUILD WEALTH & GIVE GIVE GIVE! After you have completed all 6 steps, continue building your wealth by investing & GIVE AS MUCH AS YOU CAN! That's the Fun Part. There's just nothing better than being able to Lend A Helping Hand when a Need Arises!

For 7 years now.....The "Run" has been a daily activity for AJ......One day last week, I remembered to video so that we can look back & remember.....Remember what it's like to Run Carefree As A Child, to Run with Wild Abandon towards Home Run with Excitement towards the Finish Line.......To Run & Laugh because your Mom is in the truck following behind you "acting as if" she's gonna pass you by (He always Wins😉)........& then waiting with that "look" & twinkle in his eye as I pull into the Garage of

"I Beat ya I Beat ya"...........

You see, this precious one is now 11 & My Heart feels.....the time is fleeting......One day very soon he will be too "old" to "grown" to race.......& while that Stage will be just as a Beautiful & many new memories will be will be important for us, for him, To Look Back & REMEMBER how FREEING IT IS to Be Young, To Know All Your NEEDS are Met, To Be LOVED Fiercely & Passionately for "who" you are......& Just To "BE" in the Moment........& to REFLECT BACK & REMEMBER..........that You STILL ARE LOVED Fiercely by The Creator of The Universe....By The God that came to GIVE US LIFE & LIFE TO THE FULL.....(John 10:10)

Chicken Lettuce Wraps

On My Yummy Goodness.....I decided to take a walk on the "wild side" & create my own, quick & easy version of Chicken Lettuce Wraps using only what I had in my Fridge.  Let me just say they were delicious, healthy, & easy! Plus my family devoured them in what seemed like seconds #score #really  

Now I know y'all are as busy as I am these days so thought I would keep it simple & share the recipe. 



Chicken Breasts (hormone & antibiotic free) 

1 Head Iceberg Lettuce

1-2 Heads of Fresh Broccoli

1 Head of Cauliflower

1 TBSP Grapeseed Oil

Avocado (side dish) 



Place Chicken Breasts in Crock Pot on Low, overnight or all day) to cook.  Once cooked shred & place in a bowl.  Chop fresh broccoli & cauliflower into flowerets & sautee in skillet using Grapeseed Oil..... ...wash lettuce & separate into large leaves (to wrap around the chicken/veggie combo).  Place a small portion of shredded chicken on the lettuce leaf & a few veggies on top of the chicken. May add a dash of Tamari Sauce for flavoring.  Roll the lettuce leaf completely wrapping the mixture inside & enjoy with a side of Avocado.

Susan is constantly popping in all day long telling us we aren't pretty enough, we aren't smart enough or that we can't make good decisions. She even questions when we have the desire to take that new job offer & states every reason we should not! To keep a POSITIVE MINDSET we need to be aware of her ploys & politely KICK "SUSAN" OUT THE BACKDOOR!

1. SPEAK VISION over Your Life! Know your goals & where you are going.  Breath Life into those around you & Lift Others Up! BELIEVE You Can do anything!

Chicken Stir-Fry

Need a simple clean recipe for supper? This Chicken Stir-fry Dish is one of my Favorites & is even kid-approved! Not to mention it is easy & fast!  

Here's a list of the ingredients you will need: 

2 TBS Organic Coconut Oil

2 packages of Hormone Free/Steroid Free Chicken Tenders (I like Harvestland) 

Organic Grape Tomatoes

1 bundle of Fresh Asparagus

1-2 cups Brown Rice

Put Coconut Oil in a cast iron skillet or skillet of your choice & Heat. Cut Chicken Tenders into small chunks & cook thoroughly in skillet.  While chicken is cooking, cut the grape tomatoes into halves & also cut asparagus into small pieces. Once the chicken is done, add in the tomatoes & asparagus until both are tender. Serve over Brown Rice.

I know I know…….the words Debt-Free are kinda scary & may even be words that you don’t even dare to voice.  I seriously, was so nervous to even think about being debt-free 5 years ago!  However, I knew that in order to fully alleviate my own personal stress & to maximize my earnings I needed to be able to pay my bills & still have money left at the end of the month.  In our fast-paced, instant world most of us just live paycheck to paycheck & only dream of the day when all our debts are paid & we can splurge on that so needed Vacation, or purchase our Dream Car, or even just send our kids to college.  Well, I am Happy to report that after 5 years, my Family is Debt-Free!  Friends, I promise the journey is so worth it & we have found peace like we’ve never known before!  

Here are 5 ways that helped us in our Journey to Debt-Free Living:

1.  Budget

  Track your expenses & make a list of where every penny goes.  You will be surprised at what you discover & will see areas where your spending can be cut!

2.  Dine At HOME: 

This can be a hard one, but with just a little preparation, dining at home can be so much cheaper & also start a tradition of catching up with family members over a delicious meal.

3.  Movie Night

Instead of going out to the Movie Theater choose to Rent At Home or from Red Box.  Lots of memories can be made with Family Movie Night, a shared bowl of popcorn, & bathroom breaks are made so much easier!

4.  Take Your Lunch To Work

It is estimated that people spend an average of $10 on lunch, 5 days a week.  Add that up for a month & you’ve spent $250 per month & $3,000 over the year!  Decide today to take your lunch & save that $3,000 for that much needed Vacation or better yet apply that amount to a credit card or house payment!

5.  Paying Off Debt

List your debts from the smallest balance to the highest balance.  With every dollar saved above apply to the debt with the lowest balance in addition to the monthly payment.  Keep doing that until that debt is paid, the take that amount & apply to the next on the list.  Just repeating this simple system over & over again will add up to paying off a lot of debt over a period of time.

Yes, paying off debt does take time, but it is so worth it in the end!

Not A Plain Jane -- The Girl Behind The Blog

Coming from a small town, I always knew I was meant for more – my calling was for a Higher Purpose. However, growing up I always struggled with not knowing what I was called to do. My life was full of Jesus, laughter, love, perfectionism, performing and striving to always be my best. I was taught to always do my best, regardless of the circumstances so I guess that is when I started living a life of what I call “resilience”.

No matter what, I could shake off all the negative junk around me and persevere. I created a “tough” outer shell that truthfully aided in my being where I am today. However, one person can only run so long from their true calling.

In 2012, my family was hit with what I have named “Our Family Health Crisis”. My 21-year-old step-daughter was diagnosed with Stage 4 Lung Cancer and then 5 months later, my Dad was diagnosed with Stage 5 Lymphoma. So you can see we were in true crisis-mode. My husband was taking his daughter to MD Anderson for her treatments while I was driving my Dad to Little Rock AR every single day for his treatments.

It was a crazy time of merely “surviving”, however it was during these 10 months that I noticed just how many people all around us were sick, were struck down with disease, who were merely just “existing” from treatment to treatment, strung out on every medicine known to man. Each with their own set of health issues, with their own diagnosis, with their own link to cancer.

Of course, we were in “survival” mode so the impact of what I saw was not realized until months later.

In the process to taking care of our precious family and sitting in the hospitals, my husband and I did what almost everyone does: We ate. We ate out of stress, out of boredom, because cookies, pizza and Starbucks seemed to numb the pain of watching those you love go through so much. And I gained 25 pounds!

Now being 5‛3” you can imagine how noticeable that was for this short, petite girl! And this girl did not like all the “extra”, nor did I feel good about myself or what I looked like.

It was in this moment I began to process what the doctors had told us about what they know about cancer – cancer feeds on sugar, so many of the foods we call “normal” are laced with additives, preservatives, & artificial sugars. Our children are all well-fed and growing, but starving nutritionally on the inside.

The more I learned, the more I wanted a plan that could teach me how to eat to live instead of living to eat, a plan that would walk hand in hand with changing my lifestyle, as well as the lifestyle of my entire family, bringing about total health and Wellness. Then the text came from my friend and sister in Christ, ERVP Gena Fryar. Very sweetly she simply said “Hey, I know you said you weren't interested in working your Arbonne business, but I just want you to know that you have qualified to promote to District manager this month. I would love to help you and work with you if you are interested in promoting”.

Talk about confirmation! I hear you Lord! So my Arbonne business journey began. With a shout out from my Loving God & through the confirmation of one text message.

To say God has blessed this business and my family through this business is an understatement. In just 8 short months, I was able to retire from my 9 to 5 of 18 years and come home to my family, my kiddos and My Life. I stepped into time freedom like I‛ve never known and into the purpose for which He has called me to fulfill. 

Arbonne is the vehicle that helped me earn an amazing income and realize my passion for loving and serving others as well as helping so many step into their greatness. It has shown me my “Why” in this life, which is to love, serve, and build up my family and everyone around me.

Arbonne is the link guiding me to who I truly am in Christ and for that I am eternally grateful. Not to mention the amazing, inspiring friends and culture surrounding this business.
